Pike With Tomatoes Recipe
Fish is what I have been cooking this past week and I must say I love preparing fish dishes. This time I decided to get pike fillet and was debating what to do with it. I was thinking to fry it and then suddenly I got a great idea like why not broil it in my oven. I got another great idea before putting it into the broiler and so I decided to fry up some ingredients to make it even yummier. I will say that my older daughter does not love fish at all, this one she actually really asked for triples, and my baby too was so excited and asked for triples. Let's not forget the husband who fell in love with this dish and wanted triples also. It was a hit once again and my new recipe was born. Ingredients:
● 11oz pike fillet
● 1 can of diced tomatoes
● 1 large Spanish onion
● 2 large garlic cloves
● Salt to taste
● Pepper to taste
● 1 tsp old bay seasoning
● Vegetable oil
Directions:
Wash the fillet and dry it up with some paper towels. Put some vegetable oil in an oven-safe dish to coat it so the fish doesn’t stick and place the fillet in it. Season with salt and pepper to taste. Next, chop up the onion in half rings and chop up garlic in round form. Put some vegetable oil to cover the pan and let it warm up for 2 minutes and then drop in the tomatoes, onion, and garlic. Add the old bay seasoning and let it fry until the onion is soft and a bit brown. When tomatoes are ready take it off the stove and leave it for 5 minutes and then pour it over the fillet. Put the fillet straight to the broiler at 400 F for 30 minutes. To see if ready take a metal skewer and stick it in the middle of fillet and make sure it has no resistance and skewer is warm.
