Lemon cheesecake bars with puffed wheat bottom


Ingredients:


1/4 cup almond flour

1/3 cup of sugar

Zest of 1 lemon

1 egg

11.5 oz whipped cheese

Anise extract 4 drops

2 1/4 tsp lemon extract

2 1/2 tsp vanilla extract

1/2 cup of puffed wheat for bottom


Directions:


-Add the almond flour, sugar, whipped cream cheese, zest of lemon, egg, and extracts. Mix with a hand blender

-Spread out puffed wheat for the bottom of 9'' by 6.5'' pan

-Pour mix over puff

-Bake at 350F degrees 35 to 45 minutes or until center is set and slightly brown, check with a toothpick if it comes out dry than its ready.

-When cooled down, place in the fridge for about 1 hour and then slice into squares.
