Jasmine brown rice all in one pot
2 medium Spanish onions chopped
1/2 tbsp fresh ginger minced
3 large garlic cloves minced
8 white mushrooms medium cut into 4
2 large chicken breasts cubed
1 can sweet golden corn
2 cups Jasmati brown rice
3 cup water add
1/2 cup pure olive oil
1tbsp of nutritional yeast
1/2 tsp chili powder
1/2 tbsp adobo
Kosher salt to taste
Pepper to taste
Instructions:
-Heat oil on medium heat
-Add onions fry till tender
-Add ginger, garlic, corn, chicken breast, cook for about 10 minutes
-Add all seasonings and spices
-Add mushrooms, cook with the rest of ingredients about 5 minutes
-Add rice cook for about 7 minutes, stir a few times
-Pour water cook uncovered about 15 minutes, and then covered for 25 to 35 minutes on small flame or until rice is ready and water is gone. The rice should be fluffy.
